Mis en place
To make graham cracker crust, in food processor, pulse till fine 13 crackers. Add melted butter and powdered sugar and pulse until it comes together.
Ready to go in springform pan.
Pat down in pan. You can use the bottom of a glass.
Bake in 350 degree oven for 10 minutes. Have tin foil wrapped around pan during the whole process of baking the cheesecake to avoid oven spills.
Saute apple slices in pan with butter, cinnamon sugar and maple syrup until soft but still holding its shape.
The apples will caramelize. Stir in cornstarch.
Set aside to cool slightly.
Spread evenly on top of crust. Try to keep them from touching the sides of the pan.
To make streusel topping, pulse flour, oats, brown sugar and cinnamon in food processor.
Add butter slices and pulse till crumbly and set aside.
To make cream cheese filling, blend softened cream cheese with sugar and cornstarch.
Add eggs 1 at a time with vanilla and cream. Sometimes I add a squeeze of lemon or some lemon zest. Spread evenly on top of apples.
Sprinkle on streusel and you are ready to bake in 350 degree oven for about 75 minutes. Cover with tin foil during the middle part of baking to make sure filling cooks and streusel doesn't burn.
Chill over night then remove from pan and pour caramel sauce over top.
