Assemble the ingredients (listed at start of the supplies list)
First you need to cook all the bacon. I find the easier way is to bake it in the oven. To do this preheat the oven to 400F. Line two baking sheets with baking paper and the arrange the bacon slices.
Once ready put them in the oven with the timer on for 8 mins. When the timer goes off turn the sheets around and cook for a further 5-8mins.
You want the bacon on the crispy side
Transfer the bacon on to kitchen paper to absorb the excess fat and leave to cool.
Once cooled reserve 4 slices, chop the rest and place to the side. Chop the reserved slices and also put to the side.
Measure out your other ingredients.
Add them all into the saucepan.
Over a low heat slowly melt and combine all the ingredients
I take my time and do this slowly until it is smooth and glossy.
Take the larger amount of chopped bacon and stir into the fudge.
Take your 7 x 11 pan (either metal or Pyrex is fine) and spray with cooking oil.
Empty the contents of the saucepan into the prepared pan and then scatter the reserved chopped bacon over the top.
Once the fudge has cooled enough to put in the fridge, cover and chill until firm. This is generally a few hours, but I leave it overnight. Once firm, run a knife round the edge and tip out.
Chop into bite sized pieces and enjoy :)
